Apple season is in full swing here in the Pacific Northwest, and if your kitchen is overflowing with fresh apples, I have the perfect recipe for you! These apple cinnamon muffins are soft, fluffy, and topped with a buttery crumble that makes them absolutely irresistible. They’re the perfect treat for breakfast, snacks, or to share with friends and family.
Ingredients
Muffins
½ cup salted butter (room temperature)
1 ¼ cups sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
2 cups chopped apples
1 cup milk
Crumb Topping
⅔ cup all-purpose flour
⅔ cup oats
½ cup brown sugar
1 teaspoon ground cinnamon
½ cup salted butter (room temperature)
Directions
Muffins
Preheat your oven to 375°F. Line a muffin tin with papers or lightly grease.
In a large bowl, cream together the butter, sugar, and vanilla extract until light and fluffy.
Add eggs one at a time, mixing well after each addition.
In a separate bowl, whisk together the flour, baking powder, and cinnamon.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Gently fold in the chopped apples and milk until fully incorporated.
Fill muffin cups all the way to the top and set aside.
Topping
In a medium bowl, combine the flour, oats, brown sugar, and cinnamon.
Add the softened butter and mix until crumbly and well combined.
Sprinkle generously over the muffins.
Bake
Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. Let cool slightly before enjoying warm.
